石锅菜鲟的做法
把菜鲟揭壳洗净,用刀斩成块,加盐,姜葱汁和料酒腌制入味,再在刀口处粘点干淀粉,然后投入热油锅中炸至表皮酥脆而且内熟,在捞出沥油。
锅中留底油,下入猪肉末炒干炒香,放入姜米,蒜米,芽菜末,熟豌豆,杏鲍菇粒和葱花炒出香味,再放点加饭酒,放点鲜汤,放入炸过的菜鲟,青椒和小米辣,调味精,盐,鸡精,生抽,辣鲜露,胡椒粉,炒制收汁入味,淋一些麻油即可,出锅装在盛️米饭的石锅内,放上鲟壳即可
